Chickpea and Apple Brownies

Feebs still can’t walk. Whatever. We aren’t really shocked. She’s just not interested, and no amount of cajoling is going to get her to shake a tail feather.

She can however, make a stinky face. She has been sharing this skill with random citizens in the grocery store, as they smile and say “What a cute baby!” Which is quickly followed by an alarming “Oh my!” when she turns up her nose and looks at them as if they are the smelliest thing since last nights diaper.

At first she appears to pucker her lips . . .

And then her eyebrows begin to scrunch up just a bit. . .

But not before the bridge of her nose pinches. . . .

And she looks at you as if you’ve just bathed in a vat of rotten eggs.

Which is not without rolling her eyes to the back of her head, and making you think she’s going to pass out.

Now that’s talent.

And you there!  I know you’re making a stinky face at the sound of a brownie made with chickpeas.

Stop that! I’ll agree it does sound strange, but if you just give it a try, I think you’ll like it.

First, you can’t taste the beans or the apples, just fudgey goodness. They are dense, chewy, and utterly heavenly.

Look at them.  You know they look good.  You can even add nuts if you like.

Second, it’s easy, and anybody you’re trying to sneak fruit and veggies into, will be none the wiser.  These brownies have the consistency of a Little Debbie brownie, and are quickly becoming a family favorite around my house.

When I served these, no stinky faces were to be seen, only smiles all around!

Chickpea and Apple Brownies

Ingredients:

1 Box of Brownie Mix

1 15oz. can Chickpeas, rinsed and drained
6 oz. applesauce
1 egg
1/2 c. water

Directions:

1. Preheat oven to 350 degrees.
2. Grease a 13X9 inch pan.
3. To a blender, add chickpeas, applesauce, water, and egg.  Blend until smooth.
4. In a large mixing bowl, combine chickpea mixture with boxed brownie mix. Stir until fully combined and most of the lumps are gone.
5. Pour into the baking pan and cook for 30 minutes or until the edges are slightly dry, and a toothpick inserted comes out clean. Cool and cut into squares.
