Fish Tacos with Creamy Dill Sauce

I was brushing Bella’s hair the other day, and we decided to go for something a little different.  Curls.

Me:  Oh Belly, you look so cute!
Bella:  Yeah, just like I went to the Beauty Parlor.

Me: Yup, I think you look like Shirley Temple.

Bella: I think I look like Sponge Bob.

I think she may be right.

I don’t know if you’re aware of this but, Spongebob’s favorite food is Krabby Patties.  I’m not making Krabby Patties today, but these are pretty darn close.  It’s what you’d eat if you like Krabby Patties, but live in Texas (or anywhere for that matter).

Fish Tacos with Creamy Dill Sauce

Fish:

4 Filets of White Fish
1/2 TB Lemon Juice
1 lemon, sliced
Creole Seasoning ( or Salt/Pepper)
*Tortillas
Lettuce
Tomatoes, diced
Shredded cheese

Sauce:

1/4 c. Light or Fat Free Mayo
1/2 cup yogurt or light sour cream
1/2 TB lemon juice
1/4 tsp Garlic Powder
2 TB fresh dill or 1 tsp dried dill

1. Preheat oven to 350.
2. Place fish in a baking pan that has been sprayed with cooking oil.  Season with creole seasoning.  Place lemon slices on top of fish, and bake until flaky and cooked thoroughly about 20 minutes.
3. While the fish is cooking, make sauce.  In a small mixing bowl combine mayo, yogurt/sour cream, lemon juice, garlic powder, and dill.
4. When fish is cool enough to handle, flake and place in a serving bowl.
5. Assemble tacos by layering fish, lettuce, tomatoes, cheese, and dill sauce on a tortilla. Enjoy!

  2. I’m gonna have to put my T’Eastlyn foot down and insist you go back to the plain little girl pony tails. Bella does not need to look like a teenager just yet! Actually, she looks quite beautiful (not like Sponge Bob) with her hair all curly. I have tears in my eyes as I’m typing this, Nicole! *sniffle* Okay, so maybe I’m a little hormonal and sappy ’cause I just finished reading Nicholas Sparks’ “Last Dance”. Sorry, I’m better now…
    About those fish tacos…they sound yummy. They’ll be perfect for Lent, too. I prepare my fish the same way, only I drizzle melted butter before adding the lemon slice for a few *extra* calories that I can ill-afford but taste oh so good.
