Probably a non-lazy person would not try to convince you that laziness is a virtue.
And by now you’ve concurred that a lazy person is talking to you right now.
While others might hold their hands down in shame, I hold my head high, my shoulders square looking at you. . . .dead in the eye. . . . .
This is who I am . . . .and it has given me all that I have.. . ..
A husband who prints 3 copies of directions for me because he’s worried that I didn’t bother to figure out where I am going.
Children who wash their own clothes and prepare their own meals because they are worried that their mother will “forget”.
And. . . .
A 13-year-old daughter who thinks I’m a ding a ling, despite the fact that I have managed to keep her alive for all 13 years of her life. One who is constantly rolling her eyes and tearfully reminding me that I only make her life more difficult. YET, a daughter who is extremely talented in watercolor composition, so much so that I may never have to pay for another piece of art in my life.
So yes, this is where my laziness has brought me.

A painting made by my 13-year-old kid. You may remember, I first showed it to you in May.
She hates it of course.
I love it of course.
And of course, it’s been sitting in the dining room for 4 months waiting for me to take it to Hobby Lobby to get measured for a frame.
So 4 months later (today). . . .my lazy forgetfulness has taken over, and I find myself in a thrift store (avoiding physical labor) and what do you know, I find this.
A potty green, brown and black picture frame with a parrot inside ($3. Holla!). Surely designed by the heavens in anticipation of the artwork from my very own achingly pained artist.
So, the lesson here?
It’s okay to be lazy. It can save you money. It saved me like $40 on the frame, and another 100 billion on the art.

If this, my friend, has not yet convinced you to step over to the dark side, I present Exhibit B.
The person who wrote this book is not lazy.
The people who use the book to make these recipes are not lazy.
BUT!
MAYBE!
The people who pick up this book and hand it to their spouse because they don’t feel like making dinner AND because they realize that RAMEN is their spouses favorite thing in the entire universe (besides Red Kool-Aid and them of course) , could be a smidge lazy.
And. . . .
A LOT genius. Because they (me) realize that once said spouse opens the book and realizes that RAMEN ( The food of Gods as they have once been quoted ) can be made into DESSERTS, Salads, Beefy Chili Noodles, Bacon Crumbled Breakfasts, Trail Mix, and Caramel Crisps. . . .he could have the ability to use his favorite food to make over 70 mouth-watering recipes. ON. HIS. OWN.
I’m sure, that the world will realize. . .that laziness (mine in particular ) can sometimes be genius in disguise.

TANGERINE CHICKEN SALAD

Makes 6-8 Servings
1 (15-ounce) can tangerines or mandarin oranges, juice reserved)
1/4 cup cider vinegar
2 tablespoons sugar
2 tablespoons soy sauce
2 teaspoons plus 1 tablespoon sesame oil, divided
2 packages chicken ramen noodles, crushed
2 tablespoons sesame seeds
1/2 cup slivered almonds
1/2 head red or green cabbage, sliced
1 cup shredded carrots
1 bunch green onions, chopped
1 head lettuce, sliced
1 chicken breast, cooked and finely diced
Preheat oven to 350 degrees.
In a Small bowl, whisk together the reserved juice, vinegar, sugar, soy sauce, and 2 teaspoons sesame oil to make the dressing; set aside. In a medium bowl, toss the noodles, sesame seeds, almonds, and remaining sesame oil. Spread the mixture onto a baking sheet and bake for 10 minutes. Stir and bake 5 minutes more, or until the noodles are golden brown. Remove from oven and allow to cool completely.
In a large serving bowl, combine the cabbage, carrots, onions, and lettuce. Add the toasted noodle mixture, tangerines, chicken, and dressing; toss to coat.
