Turmeric Chicken Salad

The baby (my 11 year old) is cleaning up this week. First BBQ Chicken French Bread Pizza, and now this.

Everything that I make, is with her in mind. She appreciates my lunches so much, and she is the loudest voice when something I make does not go off as well as planned.

Every time I make chicken salad, she has a complaint. And that’s because, I almost always add something sweet to it, like grapes, or apples, or sweet relish. But I tell her, “Should the rest of us do without the most delicious chicken salad for the remainder of our lives.. . .just because you don’t like it?”

And to that she replies, “Yes.”

So I put it in her lunchbox anyway, knowing that she’ll be hungry and eat it albeit begrudgingly.

But today, she wins.

Today it’s savory Chicken Salad or bust! Because I’m trying to get all the healthy things in these people, and I need them to eat every drop.

Today I added Turmeric, because it’s loaded with ALL THE GOOD THINGS to help these jokers keep their immunity up!

The Turmeric makes the chicken salad a very vibrant yellow!

This recipe serves at least 10. I made a lot, and it all was devoured, my youngest asking for seconds. You can easily cut it in half, if you’re not feeding a football team like me.

Ingredients:

5 cans chicken breast, drained
5 boiled eggs, chopped
1/2 cup Mayo
2 green onion, diced
2 celery sticks, diced
1/4 cup dill relish
1 tsp turmeric
Celery Seed, sprinkling (about 1/4 tsp)
Garlic Salt, to taste

Directions:

  1. Add all the ingredients into a large and mix well. Serve with crackers, or on sliced bread with lettuce. Enjoy!
