Spanish Tortilla made with Leftover French Fries

I love how a messy life can end up in a gloriously comforting Eggy Splendora.

I love how no matter how crazy WE are (because I know you’re crazy too), how much WE yell and get OUR feelings hurt, somehow it always ends up with US making something wonderful out of an otherwise sour situation.

Call it a super power.

Call US a genius.

Whatever you call US, make sure it’s positive or WE‘ll yell at you too. I won’t give you all the hairy details, but sometimes these fools up in here (and up in there with you), make US loose OUR mind.

Spanish Tortilla with Day Old French Fries

Ingredients:

About 4 cups of day old fried potatoes or french fries
1/2 cup olive oil, plus 3 TB
1 onion, chopped
10-12 eggs
Salt and Pepper

Directions:

1. In a non-stick skillet on medium high heat, add 2 TB olive oil and chopped onion. Cook for 3-5 minutes until translucent, and then add potatoes and drizzle with 1/2 cup olive oil. Sprinkle with salt and cook for 7 minutes, until heated through and crispy.

2. While the potatoes are cooking, crack and beat eggs into a large bowl.  Set aside.
3. Once the potatoes are hot, crispy, (cooked thoroughly, but not mushy) add the scrambled eggs. Continue to cook on medium heat until eggs begin to set and pull away from the sides of the pan (this will take about 5 minutes).

Turn your oven broiler on high.

4. Once the eggs have begun to solidify, transfer you skillet to your broiler and continue to cook until they have cooked completely and your Spanish Tortilla turns a light golden brown.

5.Remove from oven, let cool, and slide a knife around the edges to loosen. Cut into wedges and serve. Tastes great at room temperature.
