Heart Shaped Pancakes with Light Chocolate Ganache Sauce

Dear YOU,

I wanted to tell you something.  Something that kinda gets my stomach all in knots.  Makes me a little bit anxious and a lot bit woozy.

You make me happy.
I’m very happy having you in my life.  I. . . .uuuhhh, love you.

When my husband asks me about my blog, I laugh and tell him about the funny comments you left for me that day.  I tell him how much I enjoy hearing your stories and how glad I am that YOU are in my life.


I call you my friend.
I don’t call you my reader.
I don’t call you my blogger buddy.
I just call you my friend.

Many of you, I’ve never met in the flesh, but that doesn’t mean I love you any less.  You have become a part of my life, and it means a lot to me to know that I have you as a friend on the other end of this computer screen.

Anyway, my husband thinks I’m a little coo-coo. Willy nilly calling you my friend, saying that I love you.

But I do.  And I hope you feel the same. Happy Valentine’s Day.

Yell at you for using harsh tones or calling people out of their name.

YELL AT YOU for doing nothing wrong because I’m on my period.
Cry, when you send me texts that say
“Good Morning Love. Hope you have a great day! Love Mom”
Ignore you when I’m on the phone with you because I’m multi-tasking.

Heart Shaped Pancakes with Light Chocolate Ganache Sauce
Super easy to make. . . .and super special.

Basic Buttermilk Pancake Recipe or
Bisquick Ultimate Melt in Your Mouth Pancakes Recipe (this is a great dense pancake recipe perfect for shaping into hearts)

Light Chocolate Ganache Sauce
1 1/4 cup soy milk (or use any type of milk you have)
3/4 cup semi-sweet chocolate chips

1. Make pancake batter according to directions. You need a dense pancake batter that easily holds its shape when forming hearts.

2.Spray griddle with cooking spray.

3. Place batter onto griddle in the form of hearts. Cook until edges are dry. Turn. Cook until golden.

To Make the Ganache:

1. In a microwave safe bowl, add the chocolate chips and soy milk. Microwave until warm. Stir to melt. Whisk until smooth. Pour over pancakes. Devour.
