Cranberry, Candied Pecans, Bacon and Blue cheese on Baby Spring Greens and what the heck am I saying anyway?

I stepped on the scale this morning and I weighed 183 glorious pounds.

“Not bad,”  I told myself as I stepped off the glass scale and wiped the panicked beads of sweat from my brow.

3 weeks ago, I gained 3 pounds. . .putting me at a whopping 186 pounds. . .which was 4 pounds heavier than I was on June 1.

So it was an odd revelation (considering I’ve practically set up shop at McDonald’s ordering Stroopwafel McFlurries by the gallon for the last 5 days because I thought the Worldwide Favorites menu ended on July 31) that I had lost 3 pounds.

How could I have done this, you might ask?

And I might say, “By eating this Low Carb Fat Burning Salad!”

And then I’d be struck by lighting, because I’ve only been eating this salad for 3 days, and my friend, it’s got plenty of carbs in it.

But. . .

Who the flip cares.

Let’s throw caution and our Keto diets to the wind, I say!

Repeat after me. . .

A salad is a salad.  . . . and it’s always healthy! Even if it has chocolate frosted donuts in it! LOW CARB BE DAMNED!

So I guess what I’m saying, if your unable to read between the McFlurry lines. . . is. . . .

Eat this carb lovers salad.

Be happy.

Maybe gain some weight or lose some weight, but finish it off with a Stroopwafel McFlurry.

I feel like over the past few years, every time I blog, I’m all “Guess what people. . .I’m back to writing!” Like it’s some big announcement and it’ll somehow make me actually start writing on a regular basis. But it hasn’t seemed to work out that way. Over the past 5 years, my life has been going through major changes and I’m trying to find my way back to writing. SO THIS TIME, this is me, telling you, nothing new other than i hope you have your shit together cuz i sure don’t.

but i am trying and i’m going to start with is here salad.

and a Stroopwafel McFlurry.

Cranberry, Candied Pecans, Bacon and Blue cheese on Baby Spring Greens

Ingredients:

Spring Mix Salad

Candied Pecans and Cranberries (buy this pre-packed at Walmart $1.98)

Red onion, chopped

bacon, cooked and chopped (i buy the already cooked kind)

Blue Cheese crumbles

Directions:

  1. Just grab 3 handfuls of lettuce and drop handfuls of each of the remaining ingredients.  In the picture posted, I didn’t add the blue cheese, because my kids don’t care for it. So, I store the salad in the fridge and add the cheese to my personal dish later.
